Three Nut Burgers

 

Three Nut Burgers

  • 1 1/2 cups cooked lentils (see below)
  • 1 1/2 cups walnuts, ground
  • 3/4 cup cashews, ground
  • 3 tablesoons almond butter
  • 1 cup dry breadcrumbs
  • 1/2 tablespoon dried parsley
  • 1 tablespoon olive oil
  • onion powder
  • salt
  • pepper

 

Combine all ingredients. Salt, pepper, & onion powder is to taste. Shape into 8 patties.

Heat a small amount of olive oil in a skillet or griddle. (I like to use cast iron.) Brown about 5 minutes on each side. (I add a small amount of olive oil when I flip.)

 

For the lentils, I use the following recipe. It will make more than you need for the burgers. I usually use the remainder for tacos or as a dip with tortilla chips.

I did use canned lentils for the burgers once when I was in a rush. The burgers weren’t nearly as good.

 

  • 1 1/2 cups dried lentils
  • 5 cups water
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/8 teaspoon thyme
  • 1/4 teaspoon celery salt
  • 1/2 teaspoon garlic powder

 

Bring all ingredients to a boil. Simmer until water is almost completely absorbed & lentils are soft.
