Cupid’s Pasta for Passion

I found this recipe about 15 years ago in a Valentines magazine. Our family has been devouring it ever since!

Cupid’s Pasta for Passion (aka Chicken Capellini)

1 stick butter

2 cups cooked, shredded chicken

4 oz can mushroom or 2 cups fresh mushrooms, sliced

1 1/2 tablespoons dried parsley

1-2 cloves garlic

1/4 cup white wine

1/2 cup grated parmesan cheese

2/3 cup milk

8 oz capellini or angel hair pasta


In a large skillet, melt 2 tablespoons butter. If using fresh mushroom, sauté for mushrooms a few minutes before adding the chicken, parsley, & garlic. If using canned mushrooms, add all 4 ingredients at once. Cook for about 5 minutes. Add wine & cook an additional 3-5 minutes. Place into a bowl & set aside.

Melt 6 tablespoons in skillet. Add cheese & milk. Salt & pepper to taste. Cook over low heat, stirring constantly until cheese is melted.

Toss cooked, drained pasta with chicken mixture & cheese sauce.
