Squash Casserole

One of our family’s favorite side dishes!

 

2 lbs yellow squash, sliced

2 tsp onion powder

2 tablespoons butter, melted

1 1/2 cups cheddar cheese

1/4 tsp salt

2 eggs, beaten

4 slices bacon, cooked & crumbled

1 1/4 cups Ritz or Club crackers

1/4 tsp pepper

 

Boil squash for 10 minutes. Drain well & mash. Combine all ingredients. Pour into casserole dish lightly sprayed with cooking spray. Bake, uncovered, for 45 minutes at 350 degrees.

 

Not having enough club crackers on hand one night, I used 1/2 cup club crackers & 3/4 cup chicken crackers. It was yummy!!!
