Coconut Mounds

One of our family’s Christmas traditions s to make lots of candies and cookies to give as gifts. Most of these go to my many doctors, their staff, pharmacy, ER staff, and IV therapy. Everyone of them loves to see me in December!

This recipe is so good and very easy to make!

For the chocolate you can use chocolate almond bark, dipping chocolate, or dark chocolate chips melted with 1/4 bar parafin wax per 11.5 oz. We melt ours in a double boiler. Be patient when melting the chocolate and let it melt slowly. Using too high of heat causes it to thicken and become difficult to deal with.

1 stick of butter, softened
1 can sweetened condensed milk
2 lbs powdered sugar
1 bag coconut

Mix well. Roll into balls or form into bars. Chill. Dip in chocolate.

We use these special tools when dipping candies.  They are made by Wilton and are inexpensive. They can be found in the candy making section of most craft stores. For the coconut mounds, I like to use the oval shaped tool.
