Chocolate Covered Cherries

These are my husband’s absolute favorites! They are time consuming since I usually triple the recipe. The cheapest way to buy the cherries is the 180 count jar from Sam’s Club. There have been years that the 180 mega jar at Sam’s has been cheaper than 60 count jar from the grocery store.

GE DIGITAL CAMERA

2 cups powdered sugar

1/4 teaspoon salt

3 tablespoons butter, softened

3 tablespoons corn syrup

60 maraschino cherries with stems

Make a fondant from the sugar, salt, butter, and corn syrup. Place in a covered bowl or wrap in plastic wrap. Chill.

Drain cherries. Spread on paper towels to absorb as much of the juice as possible.

Wrap 1 teaspoon of fondant around each cherry. Chill.

Dip in chocolate.

Allow to set for a week to allow fondant to turn to cream.
