These are delicious! Nice & chewy, not hard & crunchy. I used granola that I had on hand, which for this batch was 2 cups coconut almond & 1 cup maple pecan.
The second time that I made these, I also used granola that was on hand, which in this case was cherry vanilla. I left out the cinnamon and added 1/2 cup dried cherries. Fabulous! I think I liked them better than the first batch.
1 3/4 cups all-purpose flour
1 3/4 cups firmly packed brown sugar
1 teaspoon salt
1 teaspoon cinnamon

Pre-heat oven to 375.In large bowl, stir together flour, brown sugar, salt, cinnamon and baking soda.
Stir in remaining ingredients except granola; mix until smooth. Stir in granola.
Drop dough by rounded teaspoonfuls.
Place 2″ apart on lightly greased cookie sheet. Bake for 10 to 12 minutes or until golden brown.
Yield: 5 dozen
