Preheat oven to 400.
In a large bowl, combine:
- 1 cup flour
- 1 cup oats or granola
- 1/2 cup packed brown sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
In a separate bowl, combine:
- 2 eggs, beaten
- 3 bananas, mashed
- 1/2 cup peanut butter
- 2 tablespoons melted butter
- 3/4 cup milk
Add dry mixture to banana mixture, stirring just until blended.
Spoon batter into lightly greased muffin pan. Bake at 400 for 20 minutes or until done.
Makes 12 muffins.
