2 1/4 teaspoons active dry yeast
1 cup warm water
1 teaspoon salt
1/4 cup oil
3 cups flour
1/2 lb sausage – I used Jimmy Dean Natural
6 oz tomato paste
1/2 cup white wine
3 mushrooms, sliced
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
12 black olives, sliced
1/2 red bell pepper, roasted
2 cups shredded mozzarella
1 egg
2 tablespoons milk
dried oregano or sesame seeds for garnish
Place warm water in bowl. Sprinkle yeast over the water. Let stand 5 minutes. Add oil, salt, and flour. Blend. Knead for 5 minutes. I use my Kitchen Aid to make kneading easy.
Place dough in oiled bowl. Spray with cooking spray & cover. Set dough where it will be free of drafts. Allow to rise for 1 hour.
While dough is rising, brown sausage. Drain, if necessary.
Combine sausage, tomato paste, wine, garlic, mushrooms, basil, & oregano. Cook for 8-10 minutes & remove from heat.
Meanwhile, roast red pepper. Wash & seed pepper. Place half on foil lined pan. Flatten with the palm of your hand. Place under broiler until blistered. Put in ziploc bag & seal. Allow to cool. When cool, take pepper out of the bag & remove skin. Chop.
Stir olives & 1 cup of cheese into sausage tomato mixture.
After 1 hour, punch down dough. On a floured surface, roll out to about 14 inches long & 7 or 8 inches wide.
Spread mixture down the middle leaving a couple of inches all around.
Place peppers & remaining cheese evenly over mixture.
Fold dough lengthwise, overlapping edges. Bring up ends. Pinch to seal. Place on lightly sprayed baking sheet seam side down. Cover & let it rise for 30 minutes.
Beat egg. Stir in milk. Brush over calzone. Sprinkle with oregano or sesame seed. Score with a sharp knife. This is important as it will allow steam to escape while baking.
Bake at 400 degrees for 25 minutes.

Our daughter is lactose intolerant, so I made a mini loaf for her using 1/4 of the dough. I made hers first before adding the cheese to the sausage tomato mixture. I usually have almond or rice cheese on hand, but tonight I didn’t. She didn’t even miss the cheese! I also used rice milk for the egg wash. I used it for both loaves as there was no reason to make up two different types. Since I was out of sesame seeds, too, I didn’t put any garnish on hers.
