Mexican Rice

This recipe comes from my friend, Merrilee.

1 cup long grain rice
2 cups water
2 Tablespoons bacon grease or butter
1 teaspoon kosher salt
1/2 teaspoon each of cumin, oregano and garlic powder
1 teaspoon onion powder
1 Tablespoon chili powder
a dash of cayenne

 
Saute the rice in the grease/butter til it gets golden and transluscent. Add the water and seasonings and simmer low for 15 minutes. Fluff with a fork and serve.
