With a tangy sweetness that isn’t overpowering, Lemon Squares is such a quick, easy dessert that your family or guests is sure to enjoy.
Spray 8×8 pan with cooking spray. Preheat oven to 350.
For the crust:
- 6 tablespoons butter, softened
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1 cup flour
Beat butter, sugar, & salt until fluffy. Mix in flour. Press into bottom of pan. Bake for 15 minutes.
Filling:
- 2 eggs
- 3/4 cup sugar
- 2 tablespoons flour
- 3 tablespoons lemon juice
- 1/4 teaspoon lemon flavoring
- 1/4 teaspoon baking powder
Beat eggs. Add remaining ingredients. Beat until slightly thickened, about 3 minutes. Pour over crust. Return to oven & bake 25-30 minutes.
Cool. Sift powdered sugar over top.
