12 oz (3/4 lb) dry 15 bean mix
6 cups water
2 teaspoons onion powder
2 1/2 teaspoons Cajun seasoning – I use Tony Cachere’s
1/2 teaspoon celery salt
1 bay leaf
4 cloves garlic, minced
1 can diced tomatoes
1/2 lb smoked sausage
Combine beans, water, & seasoning in stock pot. Bring to a boil. Cover & simmer 1 hour.
Add tomatoes. Simmer for another hour.
Add sausage. Simmer for another 1/2 hour or until beans are tender.
