Banana Waffles

Once upon a time, I made waffles for breakfast a lot! As our sons grew up, started working, then went off to college, I no longer made big breakfasts on a regular basis. Last night, I had two bananas that needed to be used or tossed, so I pulled out an old favorite, banana waffles.

 

Waffles

 

  • 2 cups all-purpose flour
  • 1/4 cup whole wheat flour
  • 2 tablespoons flax meal
  • 1 tablespoon sugar
  • 1/2 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 2 tablespoons butter, melted or softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 small ripe bananas
  • Cooking spray

 

Combine all dry ingredients in a large bowl.

Place milk, butter, eggs, vanilla, & bananas in a blender & blend well. Pour into bowl with dry ingredients & mix well.

Spray hot waffle iron with cooking spray to prevent sticking & cook according to your waffle iron’s directions.

Makes approximately 4 cups of batter.

For my waffle iron, a traditional classic 4 sectioned square Sunbeam, this recipe makes 4 waffles. By traditional, I mean not a Belgian waffle maker.

  1. Where did you find a traditional waffe maker? I’d love to find a good one. 🙂 I have a lovely Belgian waffle iron that makes two at a time (same as at hotel breakfast buffets) but I prefer the thinner ones. 🙂
