This is such an easy dessert to put together. I hesitate to even call it a cheesecake. It is so light & bordering on fluffy, definitely not the thick, dense dessert that comes to mind when you think of cheesecake.
- 60 Oreo cookies
- 1 1/2 sticks of butter, softened
- 2 packs unflavored gelatin
- 1/4 cup cold water
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 cup milk
- 2 cups heavy whipping cream
- 1/4 cup sugar
Crush 36 Oreos to fine crumbs. I use a food processor. Combine with butter. Press evenly in a 9×13 pan. I use a small piece of waxed paper for easier spreading & pressing.
Soften gelatin in water. Heat in a small pan over low hear until dissolved.
Using an electric mixer, combine cream cheese & 1 cup sugar. Slowly add milk & gelatin, mixing until smooth.
Crush 24 Oreos & set aside. These can be fine or chunky, it is completely up to you.
Whip heavy cream & 1/4 cup sugar until stiff peaks form. Fold into cream cheese mixture.
Spread half of the cheese mixture on crust. Sprinkle evenly with 2/3 of the crushed Oreos. Spread the remaining half of cream cheese & sprinkle with remaining Oreos.
Cover & chill for at least 2 hours.
