I planned to make the pb&j cheesecake, but didn’t have any graham crackers to make the crust. I decided to use a brownie mix instead & eighty-six the jelly. Peanut butter & chocolate go well together. Jelly & chocolate, not so much.
What should I use in place of the jelly? I know! M&Ms! M&Ms & peanut butter & brownie, now that will go together quite well.
I used peanut butter M&Ms, but think I will try plain next time. Peanut would also be a good choice. I crushed the M&Ms. After tasting it, I think whole would have been better.
Crust:
- 9 oz-10 oz brownie mix
- 1 egg
- 2 tablespoons water
Combine all 3 ingredients and spread evenly in a greased springform pan. Bake at 350 degrees for 20 minutes.
While the crust is baking, make the cheesecake layer.
Filling:
Cream together:
- 2 8 oz packages of cream cheese
- 3/4 cup peanut butter
- 2/3 cup sugar
- 1 teaspoon vanilla
- Add 2 eggs, 1 at a time.
- Add 2/3 cup heavy cream
Scrape sides of bowl, as needed.
When the crust is done, remove from oven.
Sprinkle 1/2-2/3 cup M&Ms of your choice.
Spread cheesecake mixture evenly. Return to oven for 35-40 minutes, or until set.
Cool completely. Chill for several hours. Top with whipped cream & M&Ms, if desired.
