My son requested 3 Nut Burgers as well as beef burgers for a recent cookout. As I always, I cooked more lentils than the 3 Nut Burger recipe calls for so that we can enjoy them in other recipes later in the week. After a couple of bowls of lentil taco salad, I decided to make wraps from the lentils & veggies that were in the fridge with no definite plans. Having already used the lentils in a couple of Mexican meals, I decided to go Mediterranean for the wraps.

Step 1
Preheat oven to 425.
Slice 1/2 of a red pepper & 1/2 of an onion into strips. Chop 1 squash & 1 zucchini. Slice 2 small carrots or 1 large carrot.
Toss veggies together in a large bowl.
Step 2:
In a bowl or glass measuring cup, combine:
- 1 1/2 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- 1⁄2 teaspoon basil
- 1⁄2 teaspoon oregano
- 4 garlic cloves, minced
- salt and pepper, to taste
Step 3:
Pour balsamic mixture over veggies & toss until evenly coated. Spread evenly in baking pan.
Bake for 30-45 minutes until the softness & roasts to your preference.
Step 4
Warm lentil & tortillas. Spread lentils down the center & top with veggies.
