Corn Spoonbread




  • 2 eggs, beaten
  • 1 package corn muffin mix (8.5 oz) or 1 cup self rising cornmeal + 1 tablespoon sugar
  • 1 can cream corn
  • 1 cup frozen corn, thawed
  • 1 cup sour cream
  • 1 stick butter, melted



  1. Preheat oven to 350°F.
  2. Combine all ingredients in a large bowl. Stir just until cornmeal mix is moistened.
  3. Spray 11×7 baking dish with cooking spray. Pour batter into dish.
  4. Bake. for 35-40 minutes or until lightly golden.
